Preheat the oven to 350F!
In a medium size bowl, mix the flour, sugar, baking soda and salt together.
In a small bowl, beat the egg yolk, stir in the vanilla and then add both melted ghee and butter into the bowl. Combine well.
Mix the wet ingredients into the dry ingredients, making sure they're well combined.
Press half of the mixture into a glass pie plate, making sure to evenly distribute on the bottom and sides of the plate. Make sure there are no holes.
Layer the sliced apples over the crust. With each layer drizzle some maple syrup over it and then sprinkle the cinnamon. Amount is up to you.
Crumble the remaining dough on the top by breaking it into clumps. Finish with another drizzle of maple syrup and sprinkle of cinnamon.
Bake at 350F for 45 minutes to 1 hour or until the apples are to your desired tenderness. Test them with a fork. Also watch the top for browning and remove once its a golden color.
Remove from oven and brush with the remaining 2 tablespoons of melted ghee.
Allow to cool to a warm temperature. Serve alone, with whip cream or ice cream.
