Ground Beef Tacizza
Half Taco, Half Pizza. Looks like a lot of work but frankly you slap most of it together with the beef.
Ingredients
- 4 – 6 tortillas of choice
- 1 lb grassfed ground beef,
- 1 tablespoon Simply Ghee, divided
- 1 small shallot, diced
- 1 medium bell pepper, seeded and chopped finely, use any color
- 3-4 cloves garlic, chopped finely and divided
- 1 tablespoon Italian seasoning, divided
- 2 teaspoons dried parsley
- 1.5 teaspoon barbecue mesquite or smoked paprika
- 1 cup chopped cherry tomatoes,
- 1 medium avocado, sliced or in small chunks
- 1 teaspoon good salt, like Redmond's Real Salt
- 1 cup grated hard cheese of choice
- fresh cracked black pepper to taste
- lots of fresh cilantro, sliced jalapeno, salsa, sour cream – all for garnishing
Instructions
- Preheat oven to 400F.
- Melt half the ghee in a sauce pan. Add shallots, peppers and cook for about 3 minutes or until they soften a little.
- Add half the garlic and stir. Add ground beef and toss in half of the Italian seasonings and ALL of the other dried seasonings. Stir till incorporated and cook for 10 minutes or until the beef/meat is cooked.
- While the beef is cooking, brush each tortilla shell with melted ghee and rest of the garlic. Sprinkle with the remaining Italian seasoning, salt and pepper. Set aside.
- When beef mixture is cooked, remove from heat and allow to cool slightly.
- Top each tortilla shell with some cheese, then add the meat mixture, add tomatoes and more cheese and bake til the tortilla shells are crispy. Check after 5 minutes and keep checking till they're done to your liking.
- Remove carefully. Serve with fresh cilantro, salsa, avocado, jalapeno pepper slices, sour cream, etc.
Notes
You can be very creative with these. Use whatever veggies and/or meat (ground turkey, ground pork, etc.) you enjoy. You might simply just use beans and seasonings with lots of cheese. Sky’s the limit.
