Ghee Roasted Radishes with Black Garlic

Choosing young radishes is best since older ones can be quite peppery. Any type of radish works in this recipe. We chose French Breakfast radishes and roasted them whole since they're small and just picked from the garden. You can use larger radishes but cut them in half and roast with the cut side down. Use either our A2 Grassfed Ghee or our Domestic Grassfed Ghee for this recipe.

Ingredients
  

  • 2 bunches radishes, scrubbed and whole; sliced works too
  • 2 teaspoons Simply Ghee; melted
  • 1/4 – 1/2 teaspoon Black Garlic DIY Mix; start with lower amount and add more to taste
  • 1/4 teaspoon Redmond's Real Salt; or to taste

Instructions
 

  • Preheat oven to 400F.
  • In a saute pan, over medium heat melt the ghee.
  • Place the radishes in a bowl, pour the melted ghee and stir till they're coated.
  • Add black garlic and salt and mix till thoroughly incorporated.
  • Toss on a parchment-covered cooking sheet and roast in oven for about 10 minutes. Check at the 5 minute mark and give the baking sheet/dish a good shake.
    When done, they should be slightly wrinkled, still a little crunchy and starting to brown. Continue to cook to your desired tenderness.
    * When using cut radishes roast with the cut side down.
  • Season to taste with salt and pepper. Can be served with a dollop of sour cream or a squeeze of fresh lemon.

Notes

Radishes are not the first veggie that comes to mind for roasting but try it!  Roasting imparts a light sweetness and mellowness to its natural peppery taste.
Black garlic is a perfect complement to them.  However don’t overdo black garlic because it has a bitter aftertaste.  Salt always balances the black garlic flavor profile.
