Summer Sauce
Right out of the garden FRESH! This is such a simple recipe that tastes amazing and is so fresh and clean. Remember to douse the cooked pasta with either our A2 Grassfed Ghee or Domestic Grassfed Ghee. Add salt and pepper and Summer Sauce and voila, you've got dinner without the fuss.

Method
- Grab a bowl and place prepared tomatoes in it. Drizzle the olive oil over the tomatoes, salt and pepper to taste.
- Add the minced garlic and shallot, if using.
- Add the basil and mix well. Set bowl aside at room temperature for 30 minutes to allow all the flavors to meld together.
- Cook the pasta according to package direction. Drain and toss with ghee.
- Adjust seasonings in the summer sauce. Place pasta in bowls, topped with summer sauce and grated parmesean.
Notes
Heirloom tomatoes are awesome in this because they offer different colors, textures and flavor. Feel free to peel em or not!
Summer sauce is excellent with pasta of course, (coated with melted ghee), atop a baguette for bruschetta, complements grilled chicken breasts or salmon, and makes scrambled eggs in a wrap extra special! Or simply eat it by the spoonful!
