Morning Glory Muffins

Bring glory to your mornings with these yummy, healthy and fiber-filled gluten free muffins!

Ingredients
  

  • 4 cups flour of choice King Arthur G F 1:1 is perfect
  • 1 cup maple sugar
  • 3/4 cup raw turbinado sugar
  • 4 teaspoons cinnamon
  • 1 teaspoon salt
  • 4 cups grated carrots
  • 1 cup golden raisins
  • 2 apples, peeled; Granny Smiths are good
  • 1 cup chopped pecans
  • 1 cup unsweetened coconut
  • 4 teaspoons vanilla
  • 5 eggs
  • 1 3/4 cups Simply Ghee, melted

Instructions
 

  • Preheat oven to 350F.
  • Sift together the flour, sugars, baking soda, cinnamon and salt in one bowl.
  • Stir in grated carrots, raisins, pecans, coconut and apples.
  • In a separate bowl, beat the eggs, add melted ghee and vanilla and blend till fully incorporated.
  • Stir this mixture into the flour mixture. Make sure it is fully combined. The batter will be rather wet.
  • Using a 1/3 cup, spoon the batter into large paper cupcake liners or if using tins, make sure to grease them well with ghee before filling. Fill almost to the top.
  • Bake at 350F for 35 minutes. Test to see if they're done using a toothpick. Insert and if it comes out clean, they're done. If not, continue to bake 3 minutes at a time. You can also test them by touching the top to see if they are "springy"!
  • Remove baking tins from oven, allow to cool before removing each one from the tin.
  • Absolutely moist and yummy plain, with some ghee or soft butter, or creme fraiche.
