Morning Glory Muffins

Bring glory to your mornings with these yummy, healthy and fiber-filled gluten free muffins!
Servings: 18 Muffins

Ingredients
  

  • 4 cups flour of choice King Arthur G F 1:1 is perfect
  • 1 cup maple sugar
  • 3/4 cup raw turbinado sugar
  • 4 teaspoons cinnamon
  • 1 teaspoon salt
  • 4 cups grated carrots
  • 1 cup golden raisins
  • 2 apples, peeled; Granny Smiths are good
  • 1 cup chopped pecans
  • 1 cup unsweetened coconut
  • 4 teaspoons vanilla
  • 5 eggs
  • 1 3/4 cups Simply Ghee, melted

Method
 

  1. Preheat oven to 350F.
  2. Sift together the flour, sugars, baking soda, cinnamon and salt in one bowl.
  3. Stir in grated carrots, raisins, pecans, coconut and apples.
  4. In a separate bowl, beat the eggs, add melted ghee and vanilla and blend till fully incorporated.
  5. Stir this mixture into the flour mixture. Make sure it is fully combined. The batter will be rather wet.
  6. Using a 1/3 cup, spoon the batter into large paper cupcake liners or if using tins, make sure to grease them well with ghee before filling. Fill almost to the top.
  7. Bake at 350F for 35 minutes. Test to see if they're done using a toothpick. Insert and if it comes out clean, they're done. If not, continue to bake 3 minutes at a time. You can also test them by touching the top to see if they are "springy"!
  8. Remove baking tins from oven, allow to cool before removing each one from the tin.
  9. Absolutely moist and yummy plain, with some ghee or soft butter, or creme fraiche.
