Notes
*TIP:
Texture should be very velvety – like baby food applesauce. So blend till very smooth and then blend some more! So good when served cold with a dash of cinnamon. Ceylon cinnamon is delicate, with a citrus-floral aspect to lighten the woodsy notes. Saigon cinnamon is bold and more aggressive and contains a bit more oil. Indonesian cinnamon is the sweetest and most approachable of the Cassia varieties. Chinese Cassia cinnamon has straightforward, up-front cinnamon flavor.
